actually all I really did was take the "LEVELS ADJUSTMENT" and I just fiddled with them until I lined them up with what "should" be correct. And since you and your camera were both up to the task they come out beautifully. From PS, Image>Levels.
You should be able to snap those stalks off without any problem whatsoever, just do it with care. If the coral is new to your tank, give it a few weeks to a month to "get used" to conditions in your tank. This may help to reduce un-needed stress.
