It would help if you state exactly what your questions are. This thread talks about a lot of different aspects of how to start a tank up and would require quite a lengthy reply.
FWIW, in my opinion using ammonia to start a tank to develop ammonia, nitrite and nitrate reducing bacteria is ok. Perhaps adding a small piece of dead fish may help other aspects for developing different bacteria we need to get going. I don't believe store bought bacteria are necessary when plenty will get into the tank form the air, but if you want to add bacteria, it can't hurt. Just my two cents.

A guy local to me starts all of his customers tanks with a "powder" ammonia. Seems to work for him but I was skeptical because I had never heard of it.
Both methods work fine, and have been known for decades. I would only use either of those if I were starting with dead rock or no rock at all. I just cured the live rock and slowly added fish in my system..
That said, I'm not sure what powdered ammonia is. Ammonia usually comes in a liquid solution.
I'll have some decisions to make when I start the 125. I had a bunch of rock, about 75lbs given to me. It's dried out sittin in a container. I have the 29 gal and the 20 gal both full of live rock, corals, and fish. They will be dissolved into the 125 but I gotta figure out the best way to do it.
I didn't know that ammonium chloride was available aside from chemical companies. If you can find that, it is a fine thing to use. It will deplete alk a bit, but that probably isn't a big concern.
I'd put a few rocks or sand from the 29 into the big tank to get it a starter prep of bacteria. Then I'd cycle with a little fine powdered fish food, but ammonia can also work.
