The first is a red phase Inimicus didactylus (goblin), and the last is Chorydactylus multibarbus (bearded ghoul). Both are sting fish, and are fairly closely related to stonefish.

Generally speaking, yes and no.

IME, the red phase goblins generally remain red, but they do sometimes go a little pink depending on mood. The gray fish you see in the second shot (with the brasiliensis) is a different species (I. japonicus):

The ghoul came in as an almost solid gold color (you can see it on its side by its pectoral), but it lives in a pretty purple tank, so it has taken on coralline colors.

Oddball in the sense that you don't see too many of them, though I will probably need to donate the fish to the public aquarium once it gets to adult size.

Platax orbicularis. Not the best photograph, and it would not stop moving, unlike all the scorps in this thread.
