Bellus angel pair or other large angel. Skip the chromis, they have poor survival rates the last 8-10 months.
As far as a Sohal attacking your hand maybe coral lagoon or others who own them can give you their experiences with them. When they figure out who feeds them and regular tank cleanings Im sure it is and can be done without issue. If you have large aggressive triggers or puffers that would be a different story
I have kept many tangs together without too many issues over the years. In my 400 currently I have 9 yellows, 1 purple, 2 Blue, 2 Chevron and an Achilles.
In my old 300 FO tank I had large groups of purples and yellows and nasos. The Sohal was one of the few fish that I had that disturbed peaceful fish keeping. I have never had a Sohal attack me, although I have had many clowns. But the Sohals are notoriously aggressive fish.
There is no question that many people have success in keeping them, and they make a beautiful addition to the aquarium. But each one is unique and be prepared if you get one who likes to be mean.
The rest of your tang list can easily be done in multiples. With tangs I like to go in odd numbers when grouping them, seems to be less squabbling than with pairs. But your tank, with proper filtration, will support a healthy tang population.

Achilles aren't as delicate and mean as everyone makes them out to be, don't get me wrong they are more difficult then most. I have a Tomini, Achilles, orange shoulder, and a Desjaradini sailfin in my DT. The order I listed is smallest to biggest (3"-5.5") the tangs all get along without issues
