Something like 10% every week for the first 6months-year, then backing off to every other week if things are cool.
Kinda depends what your changing water for though. For me it sets the schedule of my maintenance routine and it helps me to not slack. Every change I blow off the rocks and vacuum the sand; I alternate changes to clean out the sump, clean the pumps and powerheads, decrud the skimmer, calibrate heaters, tune up reactors. So I'm doing a lot more than just swapping water.
I don't think small daily water swaps do much for nutrient reduction, but they are a great way to keep trace elements steady. I find kalk and regular larger changes sufficient for that.
