I noticed the water in my display tank is very high.

I have an HOB overflow with a 30 gallon sump.

Will adjusting the acrylic box that the U tube sits in adjust the height of the water in the display tank?

yes it will adjust the height of the water. And make sure that you aren't putting more water in that can drain....

Exactly, I know that if I leave my pump wide open on my 75 that my HOB overflow won't be able to handle it.
 
Like they said, if you want to adjust the height of the overflow it will change the height of the water. But if you mean that the level is too high and is rising above the overflow, you may be losing your siphon, or your return pump may be too powerful.
 
If the water is too high in your tank, you should lower the box.

If that doesn't work. going to need to put a ball valve on your return line -- assuming you don't have one.
