What Can I breed?

Clarkiis are going to get a little big for a 7 gallon...I would stick with ocellaris or perculas if you are set on a pair of clowns because they stay small.

I would really go with larger if it were me.

You want to give your fish a nice stable environment. it may be kind of hard to keep a 7gal up to par for the clowns you have to saturate feed them and i have a pair in a 30gal tank and im really feeding to saturation now and i test my parameters every other day and i still have to do 2 changes a week with the water.

Hobby Experience: Starting!

This does not bode well for a shot at a 7 gal nanno with two adult ocellaris clownfish, you are creating too much challenge for yourself IMHO. If you must , get that tank very well established and let it mature several months before adding the fish.

I know, I am not getting adults but young fry at 3-4cm.
I will be adding a protein skimmer later on, but I know I need a stable tank before I even think about live stock.

Even a stable tank that small will be a problem esp for someone just starting out.

in a 7g nano i would keep some live rock a few hermits and a snail and a single fish i wouldnt try to keep anything that will get some size to it.

I would go bigger or re-think the livestock.
