Most of them aren't so skittish that they'll stress out if you wipe the glass off or reach in to remove something from the tank, as long as you don't reach for the octopus or flip rocks over. Just go slow and wait several days before messing with it. Once the octopus adapts to captivity, and your presence, it shouldn't be a big deal.
