So I am looking at some retail sites and they have frags of chalice on small frag plugs. Im just curious how fast these tend to grow. Id hate to buy a tiny piece and then have it stay that way for a long time.

It really depends on the piece. Jason Fox's My Miami was worth $1000 per eye at one point but is now down to $50 per eye in some places. I think partially due to how quickly it grows. Same thing with some of the newer rainbow Chalices. Sexy Coral's Dynamite is said to grow really quickly.
You can expect a Chalice to grow over a frag disk in 2-3 months depending on your lighting, flow, and stable water chemistry.
