Peppermint shrimp are good as long as you get the real peppermint and not the Camel. Nothing really bad about the Camel shrimp but nothing really good either.
As far as a self sustaining system you should have no problem as long as you use good clean fish food and have a healthy bioload. Your cleanup crew sounds good as well. A good skimmer is a must. I dont really like PO4 removers or chemical filters of any kind unless it is a last resort.
Good live rock, good skimmer, good fish food, good number of fish and good lighting and you should have a happy system!
Dont forget the Cal Alk and WC's!!!
