Camera noob looking for some help.

My gf and I are looking to get a nicer camera. She has been lookin at the Nikon D60 and the Cannon Rebel XTI. We are very unexperienced when it comes to operating cameras. We currently have a Canon A630 and I managed to get some pretty good macros out of it. I can post what I did later (at work now) but we would be using this for everyday usage and taking macros. We really don't want to get a lens kit, but want to use it stock now.

So my final question would be what camera would be best for a beginner for stock usage?

Honestly you can't go wrong with either but the Canon would give you more flexibility.

Those don't look bad. You need to keep in mind that the lens that comes with the camera is what folks are talking about when folks say "kit lens." It's a decent everyday lens but it's not designed for macro use. At some point you'd really want to add a true macro lens.
 
Also, if you're currently familiar with the Canon interface sticking with the brand might make for an easier transition. Canon's exposure metering, for example, is completely opposite from how Nikon displays it.
 
It's difficult to actually buy a bad DSLR. Go to the store and play with all of the ones that you're thinking about. Pick whichever feels the most intuitive and fits your budget. Don't worry about the rest of the specs; really.
