I have picked up the supplies for making the food for those people I had spoken too.
I found a better place to buy the food so it looks like it will cost about $10 less per person than I had initially thought.

We are still on for Sunday at 4:30pm.

I am not using the stinky CORA Recipe (Fresh Seafood). My freezer still smells from the last batch that I made 4 months ago.

I found a better recipe on Renegade Reefers that is based on frozen seafood.

You wash the food while frozen, dry it and then blend/food process it.
A lot of the frozen seafood is fresher as it is processed and frozen on board the ship.

can you send me a copy of that. My freezer at school is still funky too. Not loved by the fellow teachers nearly as much LOL
 
That is why they get a thorough washing.
Much of the fresh seafood if also coated in chemicals (preservatives).
It is important to wash all seafood before use, fresh or frozen.
 
My understanding is that the salt permeates throughout, acts as a preservative and flavor enhancer (for humans). You used to be able to readily find it without salt...but that is becoming more difficult.
 
good tips about the washing, do you think that the Asian market frozen may have stuff like MSG added as well??
I was thinking about mixing up a fresh (frozen) batch for my students and I but certanly don't want to do more harm than good
 
A quick google didn't show me much about seafood preservation other than than flash freezing on the boat. Anyone have more info on the preservatives used in seafood? Something to fall asleep on...
 
I picked this up from the Tensuke Market on Old Henderson Rd and Kenny Rd.
They had two different packages of Mixed Seafood.
The other one listed salt in the ingredients as well as some of the items were cooked, this one does not list slat and is uncooked.

This package lists "Wild Caught, All Natural, Freshly Frozen"

Ingredients: Octopus, Squid, Clam Meat, Scallops, Crab Meat, Mussel Meat, Shrimp, Fish

Personally I think the quality of food at the Japanese Market is better than most places.

A number of the packages for various items did list salt in the ingredients. Given that I would expect this not to have it.
 
Tensuke Market is a great place. They will also have the little eggs for the food. I can not think of the name of the eggs off hand.

This place has alot of sushi quality meats. I would believe because of that they also would not have salt or preservatives added as it would deter from the clean taste wanted and needed for sushi.
 
I plan to use capelin roe. They have 3 varieties of Roe at Tensuke. The capelin is the smallest and least expensive. The other Roe they sell is a little larger than a pea in size, too big for most of my fish.

It does have salt and MSG, so it will get thoroughly soaked/rinsed and dried.

I have also found when using the ice cube trays you get freezer burn on the top 1/2" of the food. This may degrade the food as it dries out.

However the bigger issue is it turns into Reef Jerky and many of the fish will not eat it.

I plan to use a few fresh clams and squid, but will not use the fresh shrimp and mussels in favor of the frozen medley.
The mussels are pretty smelly and the shrimp smell does not easily wash off.
 
I do it the flat pack style. Not super convenient but it works fine for me and avoids the funk smell.
 
This was a nice gathering of a few people and the end product was a combination of a few different recipies with some added twists, we just tried some and all we can say is wow as soon as it hit the water the fish attacked it (coming out of there hiding spots) and it was just moments before the corals responded and like we never have seen them before when feeding the tank, the combination of frozen and fresh ingredients kept the smell minimal

Thanks for the info I will have to try their seafood package sometime. I know the quality of food there is generally better than at other asian markets.
 
We made just under 15lbs :eek2: of fish food. :fish1:
The smell was not bad at all this morning in the kitchen.
We used Quart size baggies (with sliders for easy access :D) and filled 18 of them to about 1/2" thick each.
Using the baggies helped the smell in the freezer too.

We washed all of the raw ingredients except the fresh clams. My hands barely smell this morning and I was up to my elbows in the stuff.

I fed the fish with it this morning and they went nuts for it. A little bit goes a long way because it is so dense. At the rate I fed this morning, 4 packs should last 6-8 months.

Deb wrote down the exact recipe we used and got a few pictures.

3 people spent about 3 hours to make the entire batch. One person had to leave an hour early, so the total man hours was around 7 hours. The last hour was mostly a one person job doing the final mix.

For this volume of food, it cost about 25% of what High Quality Food costs retail and it is a well balanced mix.
