I've seen a couple small mertens and they were all nice -- they had gold/yellow accents. I followed one (the owner was local) and the gold faded away resulting in a drab brown nem. And it got really big.
IME with a Mertens very similar to this one, once established they tend to become predominantly brown with some gold accents depending on how blue your lighting is. They also get MASSIVE quickly and because of their rock-sprawling nature take up a lot of real estate. Mine started out at about 4 inches and to yank it after a year or so. Not worth it IMO.
I like the gold but like you said they keep changing to brown. Mertens are biolumenescent though. Under blue lights they look very red or gold like in the pic.
