Is it normal for the CUC to entirely eat a dead fish?

I went away for a few days and left my tank under the care of my family. One of my fish died while I was gone and nobody wanted to remove it when they saw my CBS chowing on the body. Now that I'm home I can't find anything left - should I be concerned about an incoming ammonia spike? I see my cleaner shrimp has bright (fluorescent) green in his stomach which I presume is part of the fish?

Don't be worried, that's what the CUC is for. Oh, and that bright green on your cleaner shrimp is likely eggs.

Can cleaner shrimp reproduce without another one?? If so is there anything I can do to save the eggs?

Apparently, they can store sperm for a while. No one has ever said how long, but "single" cleaners getting pregnant is not uncommon on the boards, at least in the first few months of them being by themselves.

As for the fry, they'll basically be fish food. Lysmata have been raised in captivity, but there are several stages, and each requires a different micro food that your average hobbyist can't provide. One day, your shrimp just won't have any eggs anymore. Sorry.

Although it has never been an issue I do a check for amonia when a fish dies. Never tested positive.
