I agree about the Superman Monti picture. Here's some specs on it;
F-stop - f/4 (low number / short DOF)
Exposure - 1/250 sec
ISO -200 (higher numbers / grainy look)
Lens 100mm Macro

I usually shoot in Aperture priority and manually set the ISO. Now most of my coral photos are shot with an F/ 9 - 11, and ISO 100. I've also been experimenting with focus stacking which is multiple pictures of the same subject with the lens focused at different focus lengths layered on top of each other.

i was about to ask about focus stacking, it sounds interesting but i have never tried it, do you have any other examples?

I use a free download called CZM for focus stacking. Here's a few examples.
