OT: Why does Fla BBQ suck soo bad?

Pit Boss BBQ is good - in Palm Harbor - and there is this guy on Howard Avenue jsut south of I-275, hes in a vanct lot under a billboard, west side, on Friday afternoons - he has a pit smoker on a trailer and has the best damn BBW in town....if you catch him on Friday afternoons and evenings. I agree Fred Flemings is really gross oven-baked BBQ - Sonnys is corporate BBQ.

John - Im in Oldsmar -where the heck is Georgia Boys? Sounds like my kind of stuff!
 
you hit the nail right on the head with florida so called bbq sucking. grilling is grilling and smoking is smoking. neither of them are bqq. bbq requires bbq sauce. I don't even agree that mustard sauce is bbq because it is not bbq sauce it's mustard sauce used when grilling. very different to me at least.. if you want good bbq in florida you need to do it yourself. I learned that and keep getting suckered into paying $10 for junky burnt log tasting stuff.
since bbq is normally pork or chicken the best sauce I have found is made in Illinois and around here goes by the name of sweet baby rays. this is awesome by itself and is fairly sweet. if you want to spice it up do yourself a huge favor and get some stubbs marinade. it comes in chicken,pork and beef . they pork I think is the best and the chicken is also very good. beef is very good but not as good. probably because it was on beef.
the magic happens when you mix the 2. marinade for 1-2 days in stubbs and then grill for about 3/4 of time and then put the sweet baby rays on top. first coat light flip after 5 minutes coat a decent amount . 5 more minutes flip and coat pretty heavy. I always bbq at 325-350 so times may be different but if you don't bbq for near an hour or more your doing it wrong. not my rules just the way it is. try this out on your family and tell them you got the idea off reef central. they won't be on your case near as much for living here. ;)
I have made this for about 40 people total over the years and I would guess 30 of them flat out said it's the best bbq they have ever had. if you don't think so sorry and hope you enjoy it anyway. there are red pepper seeds in the stubbs so it will have some tang but does not burn my tongue. the wife hates hot food but loves the flavor so she eats it.

I vote for Big Johns too - he used to be in Dowtown Tampa one of my fave lunch stops, - but they made too much good oak-smoke and the jewlery store uppity neighbors forced him out. Hes got a killer hot catchupy-vinegar based sauce. Buts its simple open pit smoked..chopped on site -whacked from the bone and slpped on a hunk of bread as you watch. Hmmmm good!
 
gotta watch out for the boys under trees and billboards. I have seen one of them pee while bbqing. he at least closed the lid. I think he went on the front leg of the grill. I swore off any of those places from then on. pee may taste good I don't know.. I do know I refuse to knowingly find out.

There is a "not so good" neighborhood somewhat by where I work... Every now and then a guy breaks out this huge smoker and he sells all types of stuff... boy is it good!

I wasn't up for BBQ but all this talk has made me hungry!
 
There is a shack in Gainsville I think the place is called Froggies or similar to that . He sells BBQ and hot sauce. Ask any good old boys they will lead you to him. I am red on the inside. LOL

Woody's on Fowler and Jazzy's on Waters both have a mustard based sauce from what I recall, I don't care for it.

I agree totally that pork is the best and also on the Stubbs and Sweet Baby Rays, that's what we use at home too.

Make sure you try the baked beans and the BBQ's sausage. I don't like either one except there. The beans are the best you'll ever have. Big John has passed but his family keeps the place going. They also has some other family that has a place called "Alabama BBQ" up in Panama City, Florida with the same BBQ.

There is also a shack called Frog's BBQ on HWY 27 North of Ocala near Williston or Old Town. Their shredded Pork BBQ sandwich is good.

If you're ever in Texas make sure you hit Coulter's, it's a chain but good.

There is a large following of egg owners and we get together the 3rd weekend in March in Ocala at the Silver River State Park. If you want some real good home cooked BBQ at its finest, I highly recommend you go on Saturday to the "Florida EggFest". Last year there were 40+ backyard enthusiasts there cooking their favorite grub.

FL BBQ SUCKS!!! Not quite to a 3rd gen FL boy like myself. It's true, many regions have many styles of BBQ which may suit different peoples pallets. However, being successful at BBQ that is appealing to many people is difficult, I should know, I am the Culinary Manager of a local Smokey Bones. I am not here to say that our BBQ is the best, and to come and get it, but think it is well liked, providing great atmosphere in a comfortable setting. For those of you who want some good old FL Cracker BBQ may want to PM JoshJohson who takes it very seriously. Sorry Josh, could not resist the opportunity to exploit you like that....lol...Incidentally, Josh is also FL native. Honestly, like Robthorn said, get a quality sauce and rub and make it yourself. That, or drive to any small town in FL(population very few), and look for a rundown shack with smoke billowing everywhere, and give it a shot. Good luck.....

Sorry didn't mean to offend any native Floridians. Its just that it seems like just about everybody is from up north so why isn't there a northern style barbeque? I've been to probably 5 or 6 places and wasn't too thrilled. Never been to Smokey Bones though!!! :D Yeah after I moved into the house the VERY FIRST thing I did is went to Lowes and bought a big CHARCOAL Webber grill. Next time I'm up in Indy I am gonna bring back a case of King Ribs sauce.. Mom and Pop barbeque place... I do also like the Sweet Baby Rays.

I agree with plyle02. Diane and I pig out as Smokey Bones a couple times a month. That's our style of Baby Back Ribs!!!

I opened Citrus as a bartender, worked there for nearly 2 years.... Sometimes I wish still a bartender...lol.. Glad to hear you guys enjoy our food. cwegescheide, no problem, actually you started an interesting thread, kudos to you...lol Mike which restaurant have you tried, I am guessing Brandon? Have any of you out there tried Pat's Ho-made BBQ, It's made in Auburndale FL, I have only found it at Publix? I love that stuff on my spareribs, give it a try.
