Why doesn't the product have a quick disconnect from the gray transformer box to the stream?
The stream would be much easier to clean if it did.

Because if you were to disconnect the pump while it had power it could destroy the electronics, in general we try to eliminate connectors as in a humid salt air environment they corrode and lead to failures. If you open the driver you can unplug the pump, this serves as a forcing function to make sure power is disconnected first.
