I have just put sand into my 120 and am not sure if it is enough to host the watchman gobie. Do you think I have enough nooks and caves for mycritters to hide or roam around in. Suggestions please.

Yep, there's been several bumps of the tracks. We've hit the last one,I hope.
All of the warranties have expired on my equipment and it hasn't been taken out of the box yet.
You can always add more sand later if needed, although what you have looks fine. Get it going. I can't imagine the patience you have, with a tank sitting empty for 20 months.
I decided that I want to add some sad depth to my tank. I can see to many spots where the sand is low in my tank. The only sand I can find around here in my area is dry agaronite sand in a 30 lb bag, This sand is a finer grade than what I already have which isCaribSea live sand medium coarse grade. It looks and smells delightful. Very beachy.
OK the question. Would it be better to put the finer sand under the coarser sand or just spread it on the top ? Or does it really matter?

After my major goof putting 20lbs of unwashed sand into the tank didn't look so hot
After 3 days of settling it was better but still not clear so I turned on a power head and that seems to have done the trick. I am assuming the floating sand found refuge in the rock here and there.. at least it has improved some.
