SOP for Euthanizing a Fish?

If you go the AR15 route, you'd better make a video of it, cause I'm not sure that's ever been done! Overkill? nah. Seriously though, I'm the same way with things, and hate seeing death if it's not necessary. I'll scour my water change bucket for pods and stars before I dump it out.
 
Give it for free on Craigslist. Many people want to start for cheap. Likely that a Damsel maybe the only fish on their tank at least for now. or maybe someone with a large tank with lot of hiding places.

If you can deal with it, I vote for the razor-blade decapitation.

But if not, another way is to use carbon dioxide through an airstone in a small container.

You're to be commended for thinking through this - there's a lot of folks that very, very unfortunately either release unwanted fish into local waters, or flush 'em down the toilet.
 
Frankly, I used to feed locally invasive Nile tilapia fingerlings to my dog when I found one. He would chew them once, very quick. Not pretty, but fast and easy.
 
I also say shark (and I also used to feed goldfish to my Oscars). Circle of life, and all... And this coming from someone who stopped eating meat unless she knows where it came from. :)

Yes my LFS has a shark, two in fact. I'm not doing the Craigslist thing. So the debate continues, looks like the shark is in the lead (although that still seems a tad cruel to me), but we'll see.
 
Good News. I found a guy who has a Damsel only tank (why you'd want one I have no idea) that is willing to take him. He's been duly warned about how aggressive he is and doesn't think it'll be a problem. Hopefully I'll get him over there this week. Just checked him out last night and he seems to be doing just fine.

I hope everything works out for the little guy.
