The pieces look kinda big. They should be about the size of an eraser on the tip of a pencil. So, maybe cut those pieces in quarters?

What I do when freezing that much is I arrange the pieces in a long line on edge of plastic wrap, then roll it up, basically make a long cigar. When I need a piece, it's really easy to break off a chunk, which I can then defrost and feed to my nems.

They don't need to be fed, but I've noticed that mine seem to perk up when fed.
