Harlequin Shrimp: 1 or pair needed?

I want to get a harlequin shrimp for my nano, i'm aware that they eat only starfish. While the shrimp eats the star, can I use waterchanges from my larger SPS dominated tank? I take out 5-10 gallons a week from my 75g, could i change out a gallon or half a gallon each day while the shrimp eats with this water?

Also, can one harlequin shrimp live by itself or is a pair needed?

i used to have a pair that grew very large. They were very active and were my favorites. I had them for about 2 years before i had to give them up.

you answered my question about the white blocks.i was wondering what that was.

i just found out that the female molted, is that a good sign? they've been in my tank only 6 days, same amount as the starfish. since she just molted should i let her continue to eat or remove the starfish? and after i remove it, is it okay to wait a week before feeding again?
 
I remove the star is the shrimp does not tend to it in a few hours time. Most of the time it eats on it till it is gone, but sometimes it is full or molting and there is no sense in leaving an unattended chip or other partially eaten star in a tank. And they do not have to be eating everyday.
