You can't get 3.3 unless you are in beta program. The latest version available on the kessil website is 2.1 so you are in the latest production firmware.
I have yet to retry to connect to the light in Wifi mode. Since I've owned them, I have always had to connect to the lights directly. Tomorrow I'm gonna reset them and see if wifi mode works. Without connecting the light to your wifi network, you can't have automatic cloud backup since there is no internet connection.
However, what concerns me is that the ap700 wifi connection is wide open for anyone to connect to it. Of course, there is no access to my local network, but I hope this doesn't happen when I connect the light to my wifi network.

You can have cloud backup, you can still access the app itself when using another wifi connection, just verified it.
Also you can set up a password when you connect to the light using your device.

Good to hear!
If you set the light up through the router you can access while on that same network. You don't get "cloud" control unless you VPN to your home network.

I am have the beta firmware (v3.3.0) as well as the beta app (3.3 beta) and for the life of me I cannot get my lamp to connect to either of my 2 routers unless I have security turned off. Both routers use different ip addresses as well as they are on different channels but both use WPA/WPA2 security and AES encryption. This is getting very frustrating, has anyone else had wifi router connection issues? Any suggestions?

Download the correct firmware to the type of computer, windows or mac. Start the program and then plug the cable from the ap700 into your usb port, select "online update" and that should do it. It will report the version number when you are done.

Mines all screwed up. New firmware and app and it won't run the programs. Stays at whatever setting u press. I have it set to run program 1 minute after. Manual stay is off as well. Very frustrated. This is very bad. Tried direct and wifi many times. No luck.

I'm not sure about that, but you can back it up. You will still need to be connected to the lights for control features
