It changes, every time that I make it... the process of preperation is everything... the way and order, it is made is in my opinion more important that the recipe... but if you'd like.

1/3 bundh of cilantro
1/3 white onion
hot peppers to taste usually 2
garlic. see directions - usually 2 cloves.
tomatos - usually 6 roma. or 3-4 reg.
lemon or lime to taste.


A lady I worked with used to try to hand chop it, that didn't work well. Then I explained that the secret was the chopper... then she went home and pureed it.. into a paste in her food processer. That's to fine. I have owned about no fewer that 10 different machine choppers that we supposed to be good for salsa. I gave them all away.

The hand crank allows you to not pulverize the ingrediants into nothingness - and to hand chop takes to much time and unless your a world class chef, to big. It also does other things.

I have made great pico with:
1/4 bunch of celantro
1/4 onion
2 peppers
3-4 tomatoes (roma)

Takes about 3 minutes. Rinces clean in 30 seconds.

Nice, simple, and so good with fresh tomatoes this time of year. Fresh cilantro really makes this thing pop!
 
Scott, let everyone know if the directions were worth the email, I spent 2 hours making them... making salsa, taking pictures, drinking the beer, typing the directions, drinking the beer.

LOL, well worth the dl. Cool little food processor. Great pics, mouth watering results!

I'll see if I can compress it a bit more... down to 1.1 Meg, and converted to .pdf for those without MS word (throw your hands in the air if your a Mac user!) Kept the same res. on the pics, if you want to shrink it even more search for a freeware pic compressor program. I emailed the pdf back to you.

Actually my hubby couldnt wait anymore and googled some pico recipes last week and made some lol but it was pretty much the same ingredients as yours I think. I dunno if it tasted the same (prolly not) cuz I don't eat it.

He's been sick again so I told him he better hold off on the salsa for awhile.
He was hospitalized for pancreatitis a few yrs ago and then they took out his gallbladder and ran alot of tests but he still gets pains alot in his stomache and they never could find out why.
