Until I hang up my rock hammer and retire to write a book on stomatopods, most of the books that are out there are taxonomic treatments. There are three that are really good, but difficult to find.

Raymond Manning's StomatopodCrusatcea of the Western Atlantic, University of Miami Press, 1969 (often available on Amazon)
Raymond Manning's Stomatopod Crustacea of Vietnam: The Legacy of Raoul Serene. The Carcinological Society of Japan, Tokyo, 1995 (Spectacular watercolors by Vietnamese artists)
The only book devoted to stomatopod biology is
Enrico Ferrero's edited volume on "The Biology of Stomatopods" published in 1996 by Collana U.Z.I. (ISBN 88-7000-150-4) This is the published papers from the first and only symposium ever devoted solely to stomatopods. It was held in Trieste and at the banquet we enjoyed over 100 lbs of Squilla mantis. I have never seen a used copy available.
