Mine are hosting anemone crabs and anemone shrimp.

I've cut almost all of the ones I have. It's very easy and the recovery rate is high and fast.

The trick is to let them a) grow big enough in the first place and b) let them recover from shipping and/or being removed from a rock for a few days before cutting.

I use a blunt ended toothpick and gently - very gently - ease them off. Once they start to let go I use my finger nail. I've had a couple that had their feet deep in holes...I just leave those ones be.

They grow to be about 6 inches across and how many you could have would depend on what else you have in your tank. If you only had maxi's then you could easily have half a dozen.

As for a care guide...medium light, medium flow, good water quality.

Miniwhinny... are those Maxi- mini's? I believe that there is a species that only gets about 1.5" in diameter. Any experience with the smaller variety?

I'm thinking about the smaller variety for my 2.5 office pico and a sexy shrimp or two.

Yes, those are maxi minis. What makes things confusing is that both minis are being called Stichodactyla tapetum right now in the trade.

I know they aren't supposed to host, but there are anomalies. This isn't my tank, but a local reefer who I visited late last week. He isn't actually in the mini nem here, rubbing and such, but you'll have to take my word on it that he does swim in it, hosting the nem.
