UPDATE: Uneven surface

I crawled all the way under the house see how well the hearth is supported to my surprise it's not a solid concrete footing it's resting on the floor joists which are 4x4's also the hearth slants forward a bit. A double whammy!

is my dream done? Be honest!!

I got under the house and put screw jacks in on 10" paver squares. I still think you should pour a level slab over your hearthstones and chip it out later if you tear down the tank.

I'm thinking of ripping out the existing hearth and reinforcing the foundation and build a new one. If that's not too much money
